Day 23: Swiss Chard Salad Pizza

Today was my first day as a freelancer again! It was a long work day that by the time I came home, it was getting late. What better way for a quick dinner than a Boboli pizza with salad and no cheese.

You will see that there is some parmesan cheese because my boyfriend decided to add some on his “side”. Overall, I’ve come to see that swiss chard taste much like kale but not as tough. Since I love kale pizza, I did the exact same recipe. Garlic and extra virgin olive oil (which some restaurants label as “evoo”) really make the veggies taste amazing against the sweet tomato sauce. The veggie bacon isn’t as overpowering as real meat. But if you’re ever up for a spicier version of this pizza, I recommend addding spicy soppressata and a dash of honey.

Ingredient

  • 1 pizza dough, Boboli
  • 1 cup of pizza sauce, Boboli
  • 1-2 cups of swiss chard, washed
  • 1 tbsp of panko (or breadcrumbs)
  • 1 tbsp of garlic, minced
  • 2 slices of veggie bacon, chopped
  • olive oil, for taste
  • salt, for taste

1. Preheat oven to 450F.
2. Spray the pizza with some olive oil. Add pizza sauce. Throw the garlic on it. Add veggies, panko, and veggies.
3. Pour a dash of olive oil and salt all over like you would for a salad.
4. Bake for 8-10 minutes or until the edges of the veggie get crispy.

Another great way to have swiss chard!
